Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28-ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 corn tortillas, cut into strips
  • 2 avocados, sliced
  • 1/4 cup vegan sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute more.
  4. Stir in the diced tomatoes, tomato paste, chili powder, cumin, salt, and black pepper.
  5. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
  6. Add the tortilla strips and cook for 5 minutes, or until softened.
  7. Top with the avocados, vegan sour cream, and cilantro.
